These is one of the recipes I made together with Kate in Sweden. She had an amazing back yard, and two days after we got there, we decided to grill some meat. All of our friends came, and it was so nice. But you know me, I had to make something interesting, so I decided to make some delicious grilled chicken and veggie skewers recipe.
I love skewing delicious and healthy food on skewers. There are countless combinations that you can make for every occasion, and you are only limited by your imagination. You can make desserts, snacks, salads or even whole meals. I did a quick search and found some of the most delicious and healthy skewers out there.
There are many different kinds of skewers, you just have to play with your imagination. I’ve made many skewers recipes for you. Starting from the Grilled Brussels Sprouts Recipe that I fell in love with, then the Mushrooms Grilled Vegetables Recipe. But this recipes is different than all of these recipes. All of us fell in love with these chicken kebab sticks, so I had to take some pictures and show you how it’s done. So let’s get started with the recipe, I hope you like it too.
- 2 chicken breasts
- 1 cup mushrooms
- 1 big zucchini
- 1 red & 1 yellow paprika
- 1 big onion
- 1 tablespoon olive oil
- 1 tablespoon mustard
- 1 tablespoon red curry spice
- salt & pepper
Cut the chicken breasts in little cubes. Add them in a plastic bag, together with the olive oil, mustard, curry salt and pepper.
Close the bag and shake it a little bit so that every single peace of chicken gets the mixture on it, and leave it in the fridge for at least an hour.
Meanwhile, cut the veggies on cubes, or any shape you like.
Arrange the chicken and the veggies on the kebab sticks as you like, and grill them.
